Sunday Jammin'

Most farms in Denmark will have an elder bush growing somewhere because according to old beliefs, the elder-mother, the goddess Freja, lived in the elder and protected the good folk around her.

That the elderflowers and elderberries are said to be medicinal and a remedy against the common cold and other nastiness probably added to the popularity of the bush.

Our farm is no different. The elderberries and apples in the garden have been ripe for a while now, and today we decided to harvest:

Elderberry and Apple Jam Recipe

- elderberries picked off their stems
- slightly tart apples peeled, cored, and diced
- sugar

In the weight quantities 1:1:1

Put the elderberries and the apples into a pot and bring to a low boil. Let boil for 10 minutes and then add the sugar and boil for another 10-15 minutes. Pour into sterile jars and seal tight.

    Saw elderberries today on our way back from mushroom hunting and thought of you and your bush.
